Soil: rocky – very fertile calcareous.
Climate and territory: greatly influenced by the Ionian Sea, which transfers a large amount of heat during the winter and considerably cools the summer days. It is the hottest area of Salento but also the least rainy.
Cultivation system: espalier.
Vinification: the grapes are de-stemmed, delicately pressed, conditioned and conveyed into the fermenters. These stainless steel tanks are equipped with a refrigeration pocket that lets you monitor the wort’s temperature. Fermentation at a controlled temperature, periodic analyses and maximum cleaning produce a high-quality product without the risk of alterations that would negatively affect the organoleptic characteristics of the product over time.
Colour: intense red.
On the nose: it is complex and with a well-pronounced bouquet. The bouquet opens with sweet hints wrapped in the characteristic smells of fruit, plum and cherry jam.
On the palate: it is elegant, pulpy and very structured but balanced wine despite its high alcohol content.
Food pairings: it is particularly suitable for reinforcing pasta with meat sauce, strong dishes based on roast meats, game, aged cheeses and dishes with strong flavours.
